Testing varietal honey
The Swienty catalogue lists a conductivity meter for testing honey source (presumably meaning floral variety). How good is this technique? What other techniques are available for objective assessment of floral variety in honey????

You asked for info. on techniques used in testing for honey varieties!
I have no knowledge on the subject - apart from knowing that the
Authority protecting against fraud and adulteration here in France are building up a data base on specific properties of different honey types.
This is to be used to enssure that honeys of named type are actually what they state they are.
If I am correct (and please correct if not!) - Lavender and Accacia honeys were being dealt with. This may have already have been completed.
